Beans, Black

Ingredients

  • 1 Tbsp olive oil
  • 3 cloves garlic, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 small white onion, chopped
  • 1 large can black beans
  • 1 tsp ground cumin
  • salt and pepper
  • chopped cilantro and sliced scallions, for garnish, optional

Method

Heat olive oil in skillet; saute garlic, jalapeno and onion for 2 minutes. Add black beans and spices to the pan and heat through for another 5 minutes. Transfer to serving dish and top with cilantro and scallions.
