Low-fat Shrimp and Veggies

  • Shrimp
    • Raw shrimp, peeled and deveined (ab 12 per person)
    • Mushrooms
    • Grape tomatoes
    • Marinate in soy sauce, lime juice and a little Equal to sweeten
  • Veggies
    • Mini-squash, mini-zucchini, cut up pieces of sweet corn, or any veggies you like to grill
    • Marinate in a fat-free Italian dressing such as Kraft or Wishbone


  1. Place veggies in a grill basket and grill for 20-25 minutes
  2. Skewer shrimp, mushrooms and tomatoes (you may want to put each on separate skewers, as their cooking time may vary--the shrimp will probably cook faster [about 5 minutes] than the mushrooms or tomatoes).
