Raw Italian Vegetable Mix


  • 1 head of broccoli, cut into flowerettes
  • 1 head of cauliflower, cut into flowerettes
  • 1 container cherry tomatoes, cut in halves
  • 1 can pitted black olives, drained and cut in halves
  • 1 can water chestnuts, drained and cut in halves
  • 1 to 2 green peppers, cut in strips
  • 1 red onion, cut in circles, or 2 bunches of green onions, sliced
  • 1 container fresh mushrooms with stems
  • 2 teaspoons Italian seasoning
  • 1 pkg dry garlic salad dressing
  • 1 pkg dry Italian salad dressing


  1. Mix vegetables in large container, sprinkle Italian seasoning and Italian salad dressing over the vegetables.
  2. Mix garlic salad dressing according to , and then pour over the vegetable mix. 
  3. Marinate at least six hours before serving, stirring occasionally. Keep refrigerated. This is a recipe for all occasions but is especially colorful for the Christmas Holidays.
